Preheat oven to 400°F. Grease or spray an 8x8 (or 2 quart) casserole dish.
Combine all dry ingredients in a mixing bowl. Whisk.
Add remaining wet ingredients to mixing bowl. Whisk until thoroughly combined.
Pour/scrape into prepared baking dish.
Bake for 18 - 22 minutes or until puffy and golden brown on top.
Allow to cool for a few minutes before cutting & serving.
Serve with sugar-free syrup, Swerve Powdered Sugar, butter, whipped cream, berries, sausage & bacon - however you like your French Toast! This feeds 2 hungry people by itself or 4 people with breakfast meats/sides. Enjoy!
