Keto French Toast Casserole – just mix and bake! Has the flavor and texture of traditional French Toast without the carbs or the actual bread. Oh, and no cream cheese or cheese in this recipe – because eventually you get tired of all that cheese on keto!

Keto French Toast Without The Bread
Recently I had the privilege to attend a fabulous fundraising brunch. The food was set up buffet style and instead of being catered was made by members of the charity.
Honestly, I’m not sure if I would have recognized that this wasn’t actually a French Toast or Bread Pudding type casserole without the little placard by the dish stating “Keto French Toast Casserole – Contains Almond Flour”.
I enjoyed the served Keto French Toast with butter & a homemade sugar-free syrup. I absolutely gave my compliments to the chef & she graciously shared her recipe.
I’ve made this recipe at least 10 times since and have made it for company on more than one occasion. Guests are often taste testers over here lol.

Ingredients & Instructions
A few notes on ingredients.
I’ve used granular Swerve as the sugar replacement in this recipe. Some sweeteners are sweeter, others may not be as sweet, just know the brand you’re using. I’ve found 4 tablespoons of swerve to be perfect. If you’re not into sugar substitutes ( I get it ) you can use sugar, honey or maple syrup – but then this won’t really be keto anymore.
Any blanched, fine almond flour you have works great. I’ve used Blue Diamond, Bob’s Red Mill & some bulk brand that I’ve never heard of before – all were great.

As for the cream in this recipe, you can use light cream, half & half or heavy cream. I prefer light cream. Heavy cream will make this a bit richer, a bit more custard like.
As for instructions, we’re mixing everything together and baking until puffy & golden brown. Easy peasy!

Keto French Toast
Equipment
- 8×8 (or 2 quart) casserole dish
Ingredients
- 1/3 cup almond flour blanched, fine
- 4 tablespoon Swerve granulated sweetener
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 4 large eggs
- 1/3 cup light cream half & half or heavy cream may be substituted
- 2 tablespoon salted butter melted & slightly cooled
- 1 teaspoon vanilla extract
- sugar-free syrup, Swerve Powdered Sugar, butter, whipped cream, berries optional, to serve
Instructions
- Preheat oven to 400°F. Grease or spray an 8×8 (or 2 quart) casserole dish.
- Combine all dry ingredients in a mixing bowl. Whisk.
- Add remaining wet ingredients to mixing bowl. Whisk until thoroughly combined.
- Pour/scrape into prepared baking dish.
- Bake for 18 – 22 minutes or until puffy and golden brown on top.
- Allow to cool for a few minutes before cutting & serving.
- Serve with sugar-free syrup, Swerve Powdered Sugar, butter, whipped cream, berries, sausage & bacon – however you like your French Toast! This feeds 2 hungry people by itself or 4 people with breakfast meats/sides. Enjoy!
