The Rachel Sandwich. It’s the Reuben’s lighter sister – perfect for warm weather eats. Sliced turkey, a fresh & simple coleslaw, Swiss cheese, thousand island dressing – oh, and maybe a slice of avocado or some bacon if you’re feeling extra adventurous.

We have some major love for delis on The East Coast – especially in New York, New Jersey & Pennsylvania.

With this love comes expectations. High expectations.

We have high standards for deli sandwiches, salads, meats, cheeses, pickles & breads. The best ingredients make the best hoagies, sandwiches, soups & salads and no one has got time for anything less.

Visit standard grocery stores in these states and you’ll notice there is a large selection of quality deli meats & cheeses. People are serious about quality meats & cheeses in these parts!

Let’s Talk Bread

No shocker here – I’ll freely admit – I’m a bread snob. It’s not only because I’m an avid baker – it’s the quality of many store bought, bagged breads that scares me. Some of that stuff has the ingredients & nutritional value equivalent to sugar cardboard. Seriously.

For this sandwich I used Dave’s Killer Bread’s 21 Whole Grains and Seeds. It’s organic, loaded with whole grains, fiber & protein. Makes me happy.

I prefer to make this sandwich with whole grain bread, but I do enjoy it with sourdough bread on occasion.

Ingredients

When I make this Rachel Sandwich – I like to make it BIG.

Amounts of ingredients will depend on what size of a sandwich you like. I used approximately a 1/4 pound sliced turkey, 4 slices of Swiss cheese and more coleslaw than most normal people would consume.

I usually grab a bag of shredded coleslaw mix and make my own coleslaw. It’s fresher & cheaper. If you’re not up for that, then grab a container of coleslaw at the deli.

Preparation

Add two slices of bread to a buttered skillet. Bread should be side by side – not assembled / stacked like a sandwich. Add cheese to bread and cook until cheese is melted & bread is buttery golden brown.

Assemble your sandwich to your liking. It’s gonna be a bit messy of a sandwich to eat – it’s part of the joy.

If you’re feeling adventurous, perhaps add a slice of avocado or some bacon.

Ingredients
  

  • 2 slices thick bread whole grain, whole wheat or sourdough
  • sliced turkey
  • coleslaw – homemade recipe below
  • Swiss cheese
  • thousand island dressing optional
  • 1 tablespoon butter

Instructions
 

  • *Note*When I make this sandwich – I like to make it BIG. Amounts of ingredients will depend on how hearty of a sandwich you like. I used approximately a 1/4 pound sliced turkey, 4 slices of Swiss cheese and more coleslaw than most normal people would consume.
  • Melt butter in a skillet over medium heat.
  • Add both slices of bread to pan – not on top of each other.
  • Place cheese on each slice of bread, still open face.
  • Cook until cheese is melted and bottoms of bread are golden brown.
  • Remove bread and assemble sandwich – turkey on the bottom, top with coleslaw and a drizzle of thousand island dressing.
  • Cut in half and enjoy!

Easy Homemade Coleslaw

A simple coleslaw made with pantry staples.

Servings 1 pound

Ingredients
  

  • 1 pound bag of shredded coleslaw mix
  • 1/2 cup REAL mayonnaise none of that sweet stuff
  • 2 tablespoon white wine vinegar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt

Instructions
 

  • Combine mayo, vinegar, sugar, pepper & salt in a large mixing bowl.
  • Whisk until smooth.
  • Add coleslaw mix, stir until thoroughly combined.

    oh wow, that’s crazy! I can’t say I’m overly surprised as so many of those packaged breads seem to have so many added chemicals, etc but that’s insane. I usually have to make my own bread anyway as I’m extremely gluten intolerant but that’s a sure sign about the quality of those breads. I’ve heard of Dave’s killer breads and some good reviews but unfortunately I can’t try it 🙁 If he comes out with a GF one, I’m on it haha! This sandwich looks amazing! Love turkey and swiss, but great idea adding 1000 islands dressing! YUM 😀
